RECIPE:
Ingredients
8 lbs pork butt (or shoulder), untrimmed
10 ft of hog casings
6 PBR Beer
Large white onion, sliced
2 garlic cloves, crushed
Spices
5 teaspoons non-iodized salt
1 teaspoon black pepper
1 teaspoon dried marjoram
1 teaspoon ground ginger
1 teaspoon ground nutmeg
1 teaspoon caraway seed
1 teaspoon mustard seed
